Gnocchi Mac & Cheese

Give me the choice… cheese or chocolate… I’ll choose cheese any day of the week. In fact, there are an alarmingly high number of cheese based recipes floating around on my “Yum” Pinterest board. So many so that many moons ago I decided I just had to try one (I just never got around to blogging about it until now). I was in the mood for something completely gluttonous and so I went for the Gnocci Mac & Cheese. Of course I had to make this when Andrew was away because I don’t think there would be any way I could get him to consume such a heavy, cheesy, creamy, carb filled delight.

The recipe called for Gruyere (one of my faves), Fontina and Parmigiano-Reggiano – of which I only had the Parmesan. So I had to improvise with a little 3 cheese Italian blend.  I have to say, it probably would have tasted a lot better with Gruyere but such is life. In the end, you really can’t complain about a crunchy Parmesan crust layered over bubbling, creamy, cheesy gnocchi goodness.

Would I make it again? Well, while it was wonderful, I think the layer of oil that filled the bottom of the tupperware container of leftovers turned me off a bit. Plus I have about 62 other mac and cheese pins to try before I can give this one a second go.
